If I just sanded down the saddle without lowering the plane of the bridge then the strings would no longer anger downward to their attachment point the saddle would not receive enough force to stay in place and start to buzz when it vibrates. So one turn on the nut and pluck pluck it rattled, ugh. The job of the saddle is to transmit the vibrations to the bridge, which distributes the vibrations over the guitar body.
